When we think of the cutting mode of vegetables, don't we be better to pay attention to pay caution to ' Conservable period ' of each part of vegetable ??
For example, the top of leaf is not so long period when we pay the caution of it's conservatable period.
But the root part of the vegitable, we can expect long period as conservative period.
So, when we use the vegitable in cooking, we had better to pay caution on it's point, even though we sometime eat only leaf part of it's vegitable. ( And sometime, we are obligated to eat only root part of vegitable )
Root part of the vegitable is good material for soup use, so....
